The issues concerning the use of palm oil, which for the past several years increased a lot, are not easy to overcome: our first premise is that we do not make an indiscriminated use of this ingredient, it is used in small quantities and only in some preparations, only where strictly necessary because of being technically indispensable for the use of fats that remain semi-solid at room temperature. This ensures the stability of the product during time and does not penalize the organoleptic characteristics such as friability or taste.
Regarding the qualitative aspect of palm oil, we can not say that it is a noble oil such as sunflower seeds, or the one made by olives, but it is still allowed by the European Regulation Commission of Organic, and is therefore a non-hydrogenated oil (in organic recipes the use of hydrogenated fats is not allowed!).
There is no health alert for specific health problems related to the use of palm oil, the attention is on the general food issue: exceeding the recommended amounts for saturated fats, from any source, is not desirable in a healthy balanced diet. Read more: www.probios.it/en/palm-oil-expert-answers
The advice to use nutritional yeast flakes, without subjecting it to baking or heat, is to prevent B vitamins, a source in nutritional yeast, from being dispersed, given that not all of them are totally heat resistant.
Vitamin B5 for example is heat labile and also thiamine or vitamin B1, getting largely lost during the cooking of food.
An exception is the vitamin B2 which is sensitive to light exposure.
There are indeed many vegetarians consumers who use the product to supplement their diet with the vitamin B complex. Using this product to prepare dishes subjected to high temperatures, but this would reduce their nutritional intake of vitamins.
However this is not a ban, but an indication, because the product can also be eaten when cooked. The crust of lasagna will have little vitamin, but it can still be tasty!
Oat is a naturally gluten-free cereal: the possible presence of gluten depends on the possible presence of wheat seeds in the sacks of the oats seed or subsequently to the contamination after the farming (means of transport, silos, machinery processing).
In Italy the Ministry of Health recently authorized the use of the claim “gluten-free” on the new brand of products of Probios. This is the first line of baked goods made from oats to be authorized by the Ministry of Health, and it is therefore loanable and reimbursed by NHS for celiac patients.

It is very easy to know the origin of the raw materials in a biological product. Under the European logo “bio” you find indicated the entity code of certification (in the case of Probios BIOAGRICERT IT BIO 007) and the lettering provided that indicates the origin of the agricultural raw materials that make up the product:
- EU Agriculture: if the raw materials are grown at least 98% in Europe
- Non-EU Agriculture
- EU Agriculture / Non EU: if the ingredients are of mixed agricultural origin
- Agriculture Italy: if 98% of the ingredients are grown in Italy.
Thanks to our traceability through the lot number and the expiration, if required, we are always able to inform which specific country the raw material comes from.
The raw food is a way of natural eating based on a diet choice with foods that are not subjected to thermal treatment higher than 42 ° C. The followers of this type of diet say that the food would lose its naturalness and above would be depleted of important nutrients such as antioxidants, vitamins, minerals and enzymes.
Traditional cooking methods are not allowed, but only drying / dehydration and sun-drying. Also techniques such as sterilization and pasteurization are banned in this philosophy.
This type of diet is based mainly on the consumption of vegetables, fruits and seeds, dried fruit.

“Gluten-free” means that the product is guaranteed a gluten content of less than 20 ppm (parts per million or mg / kg), according to the current scientific knowledge (and the European legislation), considered completely safe for the celiac patients.
To get this guarantee it is not sufficient to use naturally gluten-free raw materials, but it is also necessary that the product does not become contaminated with gluten during all stages of the production process, from processing to packaging.
The food is suitable for the consumption for celiac patients only if they fall into at least one of the following 6 categories:

By the name of these spreads, 100% made of oleaginous fruits, it is understandable that they consist of oily dried fruits rich in nature of vegetable oils and can present variable consistency, depending on the type of raw material. In fact we write on the label that by not using lecithins or thickening agents, it is possible that the fibrous part of the cream is deposited at the bottom and the oily part flushes to the surface.
“Flavour/aroma” is the word that we find on most food products, and it includes all those aromas identical to the natural ones but “constructed” in the laboratory and also artificial ones constructed in the laboratory even with the use of molecules that do not exist in nature .
‘Flavorings’ are (only) products that are not intended to be consumed in their original form, which are added to food in order to impart or modify odor and / or taste.
For example: a “flavor” (and nothing else) that gives the taste of lemon peel can be legitimately made with a chemical process with the use of who knows what, and without ever having seen a lemon, while a ‘natural flavoring’ lemon zest is extracted from the lemon peel its own, at least by 95%.
We specify that the disciplinary of the Organic prohibits the use of aromas that are not natural.
I was advised to consume only cold-pressed seed oil but I can not find this specific label except on the extra virgin olive oil “Il Nutrimento”. Whereas what is the explanation for the text “extracted cold”?
Our seed oils IL NUTRIMENTO are extracted by mechanical means without overheating the seed or the press before pressing.
We then chose this voluntary indication to inform that the only procedure at a temperature at which our seed oils are exposed (sunflower oil and corn germ) is the deodorizing, an operation that allows to obtain a oil with a smell and taste less characteristic of those that has a virgin olive oil, sometimes not pleasing to the palate.

Probios offers products suitable for those who follow a vegan diet.
These products not only provide the exclusion in their recipe of milk and dairy products, eggs and honey, but offer other relevant guarantees to the consumers who made the vegan choice. The warranties on products suitable for the vegan choice can be supplied in with two different modes:
- With a self statement of the producing company guaranteeing its commitment to the principles of the vegan choice.
Probios in fact requires the production company to act in accordance with the standard for vegans both in the choice of the raw materials and in the production process, ensuring that no ingredient or food aid in the recipe has been produced and tested using or creating suffering to animals intended as living multicellular organisms, vertebrates and invertebrates.
- The logo issued by the Vegan Society: in this case the product is registered at the Vegan Society that, in 1944 first coined the term “vegan”. The registration process has been certified by the independent authority “Certification Europe Italy” which verifies the compliance of the standard of reference, allowing these products to boast of the only registered and globally recognized trademark regarding the market for vegan products.
For recipes without animal products the producer is clearly required to formally avoid or at least minimize involuntary trace contamination of animal substances possibly used in the production site. In the event that despite the efforts, the contamination is inevitable, on the package of Probios it will be reported if the substance is an allergen (such as milk or eggs).
All farmers, breeders, processors, traders, who use the term BIO, Organic, Eco, Ecological, are obliged to comply with the Council Regulation 834 of 2007, consisting of the EU Council of Agriculture Ministers.
If an operator wants to cultivate, produce and sell organic products, he has to briefly notify rather inform the competent authority of his activities, using an approved inspection body, which in the case of Probios is Bioagricert.
the mechanism is complex and involves many gears, the company, the public authority and the control bodies.
The company that voluntarily chooses to produce / trade organic undergoes a series of additional mandatory restrictions, where the most significant change is to undergo an independent external control, performed by an authorized body that carries out periodic inspections to verify the statements in the company.
The control to which we are subjected consists of: firstly there is the farm inspection, in which a sample is taken for a product that is subjected to laboratory analysis to verify their conformity with the specification of the biological and afterwards the evaluation of the documentation is made. If there are no irregularities or non-compliance, the control authority will certify the allowance of the sale of products, the number of controls and samples depends on the size of the company.
The bio-company under control must provide the Inspector in charge with complete access to all necessary documents: the impediment is punished with the most severe form that is the exclusion without being able to go back into the control system.
In our internal self-control plan there are monthly planned analysis on samples of the products and controls on pesticides on each new product. The qualification of suppliers carried out by our quality control is scrupulous and wants to be an effective tool to confirm the guarantees and reliability of the manufacturers we work with.
How come these products, with this label (made in Italy) be joined with the text “non-EU agriculture”?
Production is one thing and the agricultural origin of the raw material absolutely another. The text about the origin of the raw material is compulsory for all organic products and is located below the EU organic logo.
