I tasted your strawberry compote without added pectin, and is truly exquisite. I was wondering though, what gives the appearance gelatinous, comparable to other compound which is added pectin or sugar?

The Probios made without added pectin, are sweetened only with fruit juice. For that contain a high percentage of fruit that gives them a higher concentration of natural pectin. In this way it is not added pectin synthesis and the result is excellent. The compote is comparable to other jams in texture but with an all over natural taste. In the specific case of the strawberry compote we use grape juice concentrate as a sweetener.
