Cups with Grape and Chive

INGREDIENTS
  • - 4 potatoes
  • - 250g of grapes, white
  • - 1 small green apples
  • - 1 carrot
  • - 50g of parmesan cheese
  • - 1 bunch of chives
  • - 0,50 lemon
  • - Oil
  • - Salt
  • - White pepper
  • - Coriander beans
INSTRUCTIONS
  1. Peel the potatoes and carrot, cut into cubes by an inch low. Steam cook for 10 minutes until they are tender but abundant still slightly crunchy.

  2. Peel the apple, divide it in half removing the seeds and reduce it in cubes as large as carrots and potatoes, season immediately with the lemon juice, a pinch of salt, a tablespoon of olive oil and a generous pinch of coriander.
  3. Shell the grapes, divide the beans in half lengthwise and toss with a pinch of salt, freshly ground pepper and a tablespoon of olive oil.
  4. Shredd finely the chives and mix with 2 tablespoons of olive oil.
  5. Season the diced potatoes and carrots with olive oil and chives, add the apple and grapes, stir gently and spread the mixture into 4 cups, possibly supplemented with Parmesan reduced in thin slices and serve immediately.
