Zucchini Boats with Quinoa

INGREDIENTS
INSTRUCTIONS
  1. Cook the quinoa in 300 ml of boiling salted water for 15 minutes.
  2. Boil the zucchini in salted water for 10 minutes. Drain and divide them into 2 logs, then cut lengthwise obtaining 8 pieces. Helping you with a melon baller or a spoon remove the pulp from the zucchini obtaining the boats and taking care not to break them. So keep them warm.
  3. Saute chopped garlic in a pan with a little olive oil, add the chopped pulp of the zucchini to the quinoa, salt and mix well. Cook for a few minutes.
  4. Stuff the boats with the quinoa sauté, and then completed with a few leaves of parsley and, if necessary, with a sprinkling of black sesame. Serve at once.
