Cooking time: 50
INGREDIENTS
  • For the crisp:
  • - 100 g of sugar
  • - 100 g of flaked almonds
  • For the mousse:
  • - 350 g of dark chocolate
  • - 40 g of butter
  • - 2 eggs
  • - 1 egg white
  • - 4 tablespoons Grand Marnier
  • - 4 amaretti
  • For oranges caramelized:
  • - 1 orange
  • - 2 tablespoons powdered sugar
INSTRUCTIONS
  1. Cut the orange into slices with the peel and place them on a baking sheet. Sprinkle with icing sugar and grill under the grill of the oven.
  2. Melt the chocolate with three tablespoons of water in the microwave for 2 minutes. Add the butter into small pieces and let cool. Add the yolks, liqueur and amaretti. Beat the egg whites until stiff and incorporate the chocolate. Place the mousse in the refrigerator for 3 hours or in the freezer for half an hour.
  3. Prepare the crisp: melt the sugar in a non-stick pan, add the almonds and cook until a golden caramel. Pour it between two sheets of parchment paper and crush with a rolling pin. Eliminate the paper, cut into narrow strips and long and let cool. Compose the dish: on every slice of orange arranged two quenelle of mousse and a lozenge of crispy.
