Cups of Apples and Kiwi in Pear Sauce

INGREDIENTS
  • - 3 kiwi
  • - 1 decana pear
  • - 1 Golden apple
  • - 50 g of hazelnuts
  • - 2 tablespoons sugar
  • - 1 tablespoon of acacia honey
  • - 2 cloves
  • - 1 berry anise
  • - 0.50 lemon
  • - Cinnamon
  • - Dark chocolate
INSTRUCTIONS
  1. Peel, slice the pear and in a heavy-bottomed saucepan cook along with a tablespoon of sugar and cloves. Continue for 10 minutes, until it is soft. Remove from the heat and let rest for 30 minutes, then take out the cloves and mix, getting a medium thick cream.
  2. Gather in a saucepan the star anise with a tablespoon of sugar and 6 tablespoons water. Bring to a boil and let restrict the syrup for 5 minutes. Once cooled, drizzle the previously diced kiwi with the syrup.
  3. Reduce the peeled apple in cubes of the same size as the kiwi and season immediately with lemon juice, a little cinnamon and honey.
  4. Toast the hazelnuts in a pan for 5 minutes on low heat. When cold, rub them to eliminate the brown skins, chop them and add them to the apples.
  5. Stir the diced kiwi (remove the anise) and apple, arrange them in 4 small bowls and cover with pear sauce. If you like, decorate with chocolate chips and serve.
