Soft Apple Dessert with Clementine

INGREDIENTS
  • - 4 clementines
  • - 2 Golden Delicious apples
  • - 2 egg whites
  • - 2 cane sugar
  • - 20 g of pine nuts
  • - 1 small piece of cinnamon bark
INSTRUCTIONS
  1. Divide each apple into 8 wedges without peeling. Take away the seeds and place them in a small saucepan with a thick bottom. Add the brown sugar, cinnamon, stir and let cook for 10-15 minutes over medium heat, let dry the cooking completely.
  2. Toast the pine nuts in low heat for 5 minutes or less, mixing them frequently to not burn. Once cooled, chop.
  3. Derived from the clementines a teaspoon of grated rind, then peel them and divide them into wedges.
  4. Blend the cooked apples, once cooled and deprived of cinnamon, then flavor them with the zest.
  5. Whip the egg whites until stiff and then gently mix with the apple cream. Distribute into 4 dessert glasses or bowls made of glass, and leave them in the refrigerator for about 30 minutes. Serve by decorating the surface with the chopped pine nuts and some slices of clementines.
