Grape Tart with Dried Fruit and Fig Compote

INGREDIENTS
  • For the topping:
  • - 6 grains of grapes, white
  • - 6 grains of grapes, black
  • - 5 almonds
  • - 5 hazelnuts
  • - 6 tablespoons fig compote
  • For the dough:
  • - 200 g spelt flour
  • - 50 g of oatmeal
  • - 50 grams of rice flour
  • - 50 g almond flour
  • - 50 g of chopped hazelnuts
  • - 140 ml of apple juice
  • - 4 tablespoons of sunflower oil
  • - 2 tablespoons of maple syrup
  • - ½ teaspoon of baking powder
INSTRUCTIONS
  1. Mix in a bowl the flour, the 3 cereals (barley, oats, rice) with the almonds, hazelnuts, olive oil, apple juice, maple syrup and baking powder. Form a smooth paste and wrap in a kitchen towel. Let stand to cool for a few minutes.
  2. Picked up a small portion of dough and prepared some strips that you will use to decorate the tart. Roll out the rest of the dough to a thickness of about half an inch and lay them in a pan of 26-28 cm covered with baking paper. Distribute evenly throughout the fig compote decorated with strips and bake at 180 ° C for 30 minutes.
  3. Pull the pan and decorate with grapes cut in half, almonds and hazelnuts left whole. Bake again and continue cooking for another 5 minutes at 160 ° C.
