  1. Peel and grate the ginger. Also grated lemon rind.
  2. Combine in a bowl zest, ginger and olive oil.
    Stir with a whisk briefly, then continue by adding, one at a time, egg, egg yolk and sugar.
    Whip the mixture for 5 minutes to obtain a very soft creamy base.
    Add a pinch of salt, baking powder, sifted, whole wheat flour and continue stirring with a wooden spoon.
    Knead the last few minutes with your hands until obtaining a compact mass.
