Light Crepes of Yellow Apples with Orange

INGREDIENTS
  • - 2 fresh apples - golden
  • - 2 oranges
  • - 200 ml of semi-skimmed cow's milk
  • - 100 g flour
  • - 1 egg
  • - 1 tablespoon sugar
  • - Peanut oil
  • - Salt
  • - Powdered sugar
  • - Kiwi
INSTRUCTIONS
  1. Grate atablespoon of zest from oranges and mix immediately with half the milk and sugar until r dissolved.
  2. Beat with a whisk the egg with a pinch of salt and a little flavored milk, then add the flour and the remaining milk. Cover and let stand for one hour.
  3. Peel the red oranges and cut the flesh into small cubes, collecting them in a colander placed over a bowl.
  4. Peel the apples and cut them into chunks, then season them with the juice from the oranges and the remained grated orange peel. Bake for 10 minutes and, once cold, whisk and mix the cream with the orange cubes.
  5. Oil a frying pan of 20 cm in diameter and cook the thin crepes for 2-3 minutes on one side and about one on the other side. You should obtain a dozen.
  6. Stuff the crepes with the apple stuffing, fold them in half and then in half again to form triangles.
  7. Distribute them in the dishes and finish with a dusting of icing sugar and slices of kiwi.
