Peas Ice Cream with Strawberries and Mint

INGREDIENTS
  • - 200g Peas
  • - 200g strawberries
  • - 100g Brown sugar
  • - ½ vanill beam
  • - 15g corn starch
  • - 1 lemon
  • - Salt
  • - 350g fresh cream
  • - mint to decorate
INSTRUCTIONS
  1. Pour the peas into slightly salted boiling water, boil them for 5 minutes, then drain them and rinse them with ice cold water to maintain their vibrant green color. Let then cool down completely and rinse them.
  2. In a bowl, combine the cream, the sugar, the corn starch and the vanilla seeds and bring to boil, stirring constantly. Continue for 2 minutes, then remove from the stove and let it cool down a little bit.
  3. Combine the peas to the cream and blend to obtain a smooth cream. If needed, sift it through a colander to remove the peel of the peas. Let it cool down and store in the fridge for at least half an hour.
  4. Pour the cream in the ice cream maker and push start, following the instruction of the machine, then place the ice cream in the freezer to thicken a little more.
  5. Slice the strawberries and season them with some sugar and lemon juice. Serve the ice cream with the strawberries, their liquid and a few mint leaves.
