Pink Grapefruit Pudding with Kiwi and Chocolate

INGREDIENTS
INSTRUCTIONS
  1. Squeeze the grapefruits: you should get about 220-25ml of juice. Mix it with the apple juice to obtain 600ml of liquids.
  2. Pour the kuzu in a small pan and slowly melt the juice of its fruits to create a smooth jam. At this point add the rest of the liquids and, still stirring, let it boil on a medium-low heat, until the mixture gets thicker, compact and slightly translucent.
  3. Remove it from the heat and distribute the pudding into 4 glass cups; once it’s warm keep it in the fridge for 2-3 hours.
  4. Peel the kiwis, a few minutes after serving, and cut the green pulp into small cubes. Place them on the solid puddings, add the chocolate flakes too (or some ground chocolate) and complete with a sprinkle of cane sugar.
