Pumpkin Pancakes

  1. It’s really eay to prepare this recipe: first, take charge of the pumpkin that must be cutted and cleaned of the seeds. Cut into 1 cm thick slices, wrap them in aluminum foil and place in the oven for one hour at 200 degrees, or cook with steam. Once cooked, place the pumpkin in a blender and whisk it with the sugar, eggs and orange zest.
  2. Pour the mixture into a bowl and add the stifted flour with the baking powder, and stir well until the mixture is smooth and homogeneous. At this point, take the dough with a spoon filling for about 1/3 (pancakes falling in the oil should be the size of a walnut) and, with the aid of another spoon, drop it in a pan of hot oil: wait until the pancakes swell, then turn them with a wooden spoon and when they are golden brown all over the surface, remove them from the oil and place on a dish lined with paper towels.
  3. Serve hot!
