Rice Panna Cotta with Coconut Sugar

INGREDIENTS
  • - 250g rice cream
  • - 4 teaspoons raw coconut sugar
  • - 1 teaspoon Acacia honey
  • - 1 slice lemon peel
  • - 1 vanilla beam
  • - 1 teaspoon agar agar
  • - turmeric
  • For the decoration:
  • - 1 orange
  • - 1 kiwi
  • - powdered cinnamon
INSTRUCTIONS
  1. In a small bowl, combine the rice cream with a pinch of turmeric, the honey and 50ml water. Then, add the vanilla, the lemon peel and bring to boil. Now, add the agar agar (melt it with some water before), let it simmer for 5 more minutes and remove from the stove. Remove the lemon peel and vanilla beam.
  2. Cover the base of 4 single serving moulds with the coconut sugar and fill them with the batter. Let them sit for at least a couple hours to settle.
  3. Plate the desserts, decorate them with the sliced kiwi and orange, and sprinkle some cinnamon on top. If you do not serve them immediately, let them sit in the fridge.
