Beet Salad with Feta and Panito

  1. Grate the beets in a food processor with the disc with medium holes.
  2. Whisk now the balsamic vinegar with lemon and olive oil and add the finely chopped parsley.
  3. Season the beets with the prepared vinaigrette.
  4. Crumble the feta cheese and mix the salad with the lemon rind.
  5. Cut the Panito loaf into thin slices and grill it on a hot plate.
  6. Serve the bread with the salad for a tasty and delicious snack.
