Sweet Salad of Crepes and Caramelised Plums

INGREDIENTS
  • For the decoration
  • - Powdered sugar
  • - Mint
  • For the batter
  • - 150 ml of milk
  • - 90 g of wheat flour type 00
  • - 2 eggs
  • - 1 tablespoon olive oil
  • - Salt
  • For the plums
  • - 400 g of plums
  • - 4 tablespoons brown sugar
  • - 2 tablespoons lemon juice
INSTRUCTIONS
  1. Sift the flour and gather it up in a bowl. Add the milk a little at a time, stirring well with a whisk, being careful not to form lumps. Add the eggs previously beaten and a pinch of salt. Finally incorporate the oil, mix well all the ingredients and let stand for 10 minutes.
  2. Halve the plums and remove the stones. Toss in a pan with the sugar and lemon juice until it will begin to caramelize.
  3. Heat a pan lightly greased well and let cook a little batter at a time, just enough to form pancakes not too thin. Let them cool and cut into thin strips.
  4. Gather in a bowl the crêpes and plums, stir and distribute them on 4 plates. Decorated with a dusting of icing sugar and a few mint leaves. If you want, you can accompany the cake with a dollop of natural greek yogurt or with a scoop of vanilla ice cream, mozzarella, yogurt or almond.
