Couscous Soup with Fava Beans and Mint

INGREDIENTS
  • - 1 kg of shelled broad beans
  • - 300 g of fregola pasta
  • - 2 green onions
  • - 2 cloves of garlic
  • - 20 mint leaves
  • - Oil
  • - salt
  • For the soup:
  • - 1 stalk of celery
  • - 1 onion
  • - 2 sprigs of parsley
  • - 3 basil leaves
  • - salt
INSTRUCTIONS
  1. Prepare the vegetable soup in a pot by placing a liter of water with the celery, onion, parsley and let it boil for half an hour.
  2. in the meanwhile shell the beans, wash and drain well. In a saucepan, preferably earthenware, pour 4 tablespoons of olive oil, add the onions and finely chopped garlic and let it fry over moderate heat, stirring with a wooden spoon, making sure that they dressings do not burn. After a while, add the beans, let them cook for a few minutes then add a dozen chopped mint leaves, stir well, check for salt and mix again.
  3. Stir in the pasta at this point and immediately pour a ladle of hot soup; continue cooking for about 8 minutes (follow the time indicated on the package of the pasta) by adding a ladle of broth at a time until you get a not too runny soup.
  4. Spread the pasta supplementing it with a little olive oil and garnish dishes with mint leaves. Serve immediately.
