Purple Cabbage, Apple and Yogurt Soup

INGREDIENTS
INSTRUCTIONS
  1. In a wide pan, heat 2 tablespoons oil, sauté the onion, add the finely chopped potatoes, salt to taste and sauté until golden.
  2. Stir with a wooden spoon, then add the clean, peeled and chopped cabbage and apple.
  3. Sauté a little bit more, then add the vegetable stock.
  4. Bring to boil and cook for 30 minutes on a medium heat.
  5. Afterwards, blend the vegetables with an immersion blender adding the yogurt and process until it’s creamy.
