Spelt Pasta with Fennel Sauce and Tofu


INGREDIENTS
  • - 4 fennel
  • - 350 g of spelt pasta (penne)
  • - 300 g of tofu
  • - 1 teaspoon of turmeric
  • - 4 tablespoons of extra virgin olive oil
  • - 80 g peanuts, toasted
  • - salt
  • - pepper
INSTRUCTIONS
  1. Cut the fennel into four. Let them steam in a pressure cooker for 4 minutes. Heat half the oil in a pan and add the fennel, turmeric and tofu cubes. Cook for a few minutes over medium heat. Season with salt and pepper.
  2. Cook the pasta in boiling water. Meanwhile chop thepeanuts (without the skin) and blend the fennel and tofu with a few tablespoons of the cooking water and the rest of the oil.
  3. Heat the obtained sauce in the pan. Mix it with the pasta. Sprinkle with peanuts.
