Wood Flavored Rice

  1. Cook the brown rice in 3 cups of cold water with a pinch of salt for about 30 minutes. Meanwhile, soak the mushrooms in a cup of water and finely chop the onion. Sauté the onion with the olive oil and add the sliced mushrooms with the filtered soaking water for some minutes, after add the soy cream, season with salt and cook for a minute. Add the rice, saute at high heat, sprinkle with chopped parsley and serve hot.
