Lentil and Mushroom Burgers with Turmeric and Ginger Mayo

INGREDIENTS
INSTRUCTIONS
  1. Boil the lentils with salted water and the bay leaf.
  2. Soak the flax seeds with water for 10 minutes, drain them and process them to obtain a sticky cream.
  3. Chop the mushrooms and carrot, then bake them for 30 minutes at 160°C. Grind them both.
  4. In a bowl, combine the ground mushrooms and carrot, the flax seed cream, the minced onion, 1 tablespoon garlic, the drained lentils, 3 tablespoons mustard, 1 tablespoon oil, a sprinkle of salt and pepper. Knead to obtain a thick dough, then separate it into 4 equal servings and create the burger. Cook them on both sides for 10 minutes in total.
  5. Serve the burgers with some turmeric and ginger mayo and some salad.
