Omelette with Agretti and Roquefort Cheese

  1. Thinly slice the onion and sautè it with the milk in a frying pan for a few minutes. Then combine the agretti, minced and sliced, and continue cooking for about 10 minutes on a low heat, until the milk evaporates completely.
  2. Beat the egg yolk (keep the whites on a side) in a bowl with the crumbled cheese, a pinch of salt and pepper. In the end, add the steamed veggies.
  3. Beat the egg whites until stiff and incorporate them gently to the other ingredients.
  4. Heat 2-3 tablespoons oil in a pan and pour the mixture. Let it cook on one side, then flip the omelette and finish cooking. Serve it immediately, with salad as a side.
