Biscuits with Almonds and Chickpeas

  1. Whisk the chickpeas well reducing them to puree and arrange in a bowl.
  2. Chop the almonds in a food processor with the brown sugar.
  3. Mix the almonds to the mashed chickpeas, together with the rice flour and oil; if necessary add a little water. At the end give a cylindrical shape to the dough and cut it into thick slices about an abundant half centimeter obtaining cookies.
  4. Arrange the biscuits on a pan lined with parchment paper and bake at 180 ° C for 20 minutes, turning them once halfway through cooking.
