Carpaccio of Plum and Apple (no sugar or fructose)

INGREDIENTS
  • -2 tablespoons agar flakes
  • -150 g pitted prunes
  • -5 golden apples
  • -juice of half a lemon
  • -3 tablespoons cream or mashed almonds or chopped almonds 100 g skinless
INSTRUCTIONS
  1. First of all, soak the prunes chopped covering them with a bit of water. Next, add the agar agar and, in the meantime, peel and cut the apples and put them in a thick-bottomed pan. Cover with water up to half their volume and the soaked plums. Cook for 8 minutes. Blend until you have a soft and fine cream
  2. Pour the contents into a long pan, cake like, wet with cold water first. Let it cool down and place in refrigerator until consumption. Remove from the mold and serve cold. Garnish with thin slices of green apple, previously dipped in lemon juice to prevent oxidation. A few leaves of fresh mint will give a contrast of color and a pleasant aroma.
