Citrus Bavarese Cream


INGREDIENTS
  • - 1 liter of juice of oranges or tangerines
  • - 50 grams of rice flour
  • - 1 tablespoon of agar-agar flakes
  • - 4 tablespoons of brown sugar
  • - Zest of 1 orange or 1 tangerine
  • - Freshly ground pepper
INSTRUCTIONS
  1. Stir in cold ingredients (except citrus peel) and bring to a boil.
  2. Keep the boil until the agar-agar is completely dissolved, then pour into a pudding mold or in individual portions.
  3. Allow to cool and thicken.
  4. Garnish with a little 'zest cutted into strips and a light dusting of pepper.
