Fruit Pandoro with Orange Cream

INGREDIENTS
  • - 1 Pandoro
  • - 250 ml of milk
  • - 2 yolk
  • - 2 tablespoons of flour
  • - 3 tablespoons of brown sugar
  • - 3 tablespoons powdered sugar
  • - 2 golden apple
  • - 2 kiwi
  • - pomegranates
  • - 1 teaspoon orange zest
INSTRUCTIONS
  1. Whip the egg yolks in a bowl with 2 tablespoons of brown sugar for a few minutes. Stir in the flour and then the milk hot, freshly boiled along with the orange zest. Transfer the cream on the stove, stirring constantly, bring gently to a boil.
  2. Peel and slice the apples, then cook for 10 minutes with the remaining sugar. Once warm, whisk and mix with the cream.
  3. Cut horizontally the Pandoro in 6-7 thick slices of a few centimeters. Spread the slice at the base with a little cream, stack the second slice in order to leave the tips staggered and continue with the other layers.
  4. Peel the kiwi, cut into slices 2 mm and shape with a little star mould.
  5. Sprinkle the tomato with the icing sugar, arrange like a circle the stars of kiwi and put over each some grain of a pomegranate.
