Giant Cookies with Apple and Cinnamon

  • - 300 g of hazelnuts
  • - 200 grams of rice flour
  • - 2 Golden Delicious apples
  • - 180 g of acacia or linden honey
  • - 2 eggs
  • - 90 ml of oil
  • - 2 C brown sugar
  • - 4 C of powdered cinnamon
  1. Peel the apples, cored and cut into pieces.
  2. Chop the hazelnuts and sugar in a bowl and mix with the rice flour, then add the olive oil and lightly beaten eggs.
  3. Stir well and add the apples, honey and cinnamon, mix everything thoroughly.
  4. By hand form balls and flatten slightly and large with your palms.
  5. Line a baking sheet with parchment paper and arrange the biscuits giants.
  6. Bake in a preheated oven at 160 degrees for 30-35 minutes.
  7. Once cooked gently remove them from the pan and let cool (in fact when they are hot they are very delicate and may break easily). Keep them in a closed container.
