Kiwi Cups with Custard and Almond Biscuits

INGREDIENTS
  • For the biscuits:
  • -90g flour
  • -30g almond flour
  • -4 tablespoons apple juice
  • -2 tablespoons rice oil
  • -1 tablespoon cane sugar
  • -a pinch of baking powder
  • For the kiwis:
  • -6 kiwis
  • -2 oranges
  • -250ml almond milk
  • -1 teaspoon sugar
  • -1 teaspoon honey
  • -1 teaspoon corn starch
  • -half a lemon
  • -cocoa powder
INSTRUCTIONS
  1. Prepare the almond custard cooking the almond milk, the corn starch, the sugar and a teaspoon of grated orange peel.
  2. Mix all the ingredients for the biscuits, then roll them up into a 3-4mm layer and with a half moon mold, create 24 biscuits. Bake at 170°C for 10 minutes.
  3. Wash and dry the kiwis to remove the fuzz, then cut one edge to make it more stable. Cut them in half and remove the pulp with the help of a spoon. Chop the pulp and season it with some honey and lemon juice.
  4. Fill the kiwi cups with the almond custard and decorate with half a slice of orange, than place 3 cups in every plate and sprinkle some cocoa powder on top. Fill the biscuits with the kiwi pulp and serve 1-2 of them with the kiwi cups.
