Medlars with Pistachio Stuffing in Cherry Cream

INGREDIENTS
  • - 250 g of cherries
  • - 12 medlar
  • - 1 lemon
  • - 50 g of pistachios
  • - 1 tablespoon of acacia honey
  • - 1 tablespoon sugar
  • - 1 tablespoon of powdered sugar
INSTRUCTIONS
  1. Grate a teaspoon of lemon zest, then squeeze the juice and mix only this to the sugar to dissolve.
  2. Peel the medlar, cut them in half and season immediately with the just sweetened lemon juice, cover and store in refrigerator.
  3. Mix the grated zest with honey and add the pitted cherries, then blend it all up to reduce it in a grainy sauce. Keep this in the fridge too.
  4. Finely chop the pistachios and mix with powdered sugar, adding a few drops of water necessary to form a creamy consistency.
  5. Fill the medlars with the pistachio stuffing and place them on the cream of cherries already arranged in the dishes; If you want you can garnish with lemon slices and serve immediately.
