Spiced Apples in Cream and Nuts Sauce

INGREDIENTS
  • - 250 g ricotta
  • - 2 Golden Delicious apples
  • - 50 g of brown sugar
  • - 50 g of walnuts
  • - 30 g of amaretti biscuits
  • - 2 cloves
  • - milk
  • - cinnamon
  • - ginger
INSTRUCTIONS
  1. Peel the apples, cut them into 4 pieces, remove the seeds and slice. Arrange them in a saucepan with the sugar and cloves and cook over medium-low heat for 15 minutes until they are soft.
  2. Put the ricotta in a food processor along with the crumbled biscuits, add three-quarters of the warmed apples without the cloves; blend thoroughly.
  3. Spread the cheese cream and apples into 4 dessert bowls. Then whisk the remaining apples with a little milk and a pinch of cinnamon.
  4. Heat gently just before serving, the cinnamon sauce, and then pour it evenly over the cheese cream using a spoon.
  5. Complete sprinkling the bowls with chopped kernels and a pinch of ginger powder.
