Whole Wheat Pie with Medlars, Almonds and Pistachios

INSTRUCTIONS
  1. Preheat the oven to 180 ° C.
  2. Blend the almonds with a teaspoon of brown sugar until they are very finely chopped.
  3. Gather in a bowl the whole wheat flour, grounded almonds,, brown sugar (keep aside half a tablespoon), baking powder and mix well.
  4. Beat the egg with yogurt and milk, then stir in the flour mixture working with a spatula until it is completely merged. Then place the dough in a rectangular pan from about 11 x 25 cm (if you don’t have one you can also use a round one about 18-20 cm in diameter).
  5. Peel the medlars and cut them in half, then place them (without pressing) on the mixture with the inside up. Sprinkle the surface of the pie with brown sugar kept aside and with the chopped pistachios.
  6. Bake for 18-20 minutes in the central part of the oven, at the end a few minutes at the higher level for browning well the surface. Cut the pie into slices (or wedges) and serve warm or at room temperature.
