Wholewheat Plumcake with Blueberries

INGREDIENTS
  • - 150 g of blueberries
  • - 140 g of wheat flour
  • - 120 g of sugar
  • - 80 g of white flour
  • - 60 g of potato starch
  • - 60 ml of corn oil
  • - 2 eggs
  • - 1 tablespoon orange zest
  • - 1 teaspoon of baking powder
INSTRUCTIONS
  1. Mix in a bowl the whole wheat flour, white flour and starch.
  2. Whisk the eggs with the sugar and the yeast. When they are foamy, add the oil and blend again for a few seconds.
  3. Stir the liquid mixture to the flour, stirring carefully. For the last add the blueberries and the orange zest.
  4. Pour the mixture into the loaf pan lined with parchment paper and bake at 180 ° C for about 50 minutes. Let cool, then take out gently from the mold and place on a rack to cool.
