Green Barley Green with Zucchini and Avocado

INGREDIENTS
INSTRUCTIONS
  1. Place the barley in a colander and rinse until the water becomes clear. Then boil it in lightly salted water. Stir occasionally and continue for 10 minutes
  2. Check, meanwhile, zucchini and green beans and cut them into slices. Then add them to barley (which in the meantime will have already cooked for 10 minutes) and finish cooking another ten minutes. Drain thoroughly and let to cool in cold water, then pour the barley and vegetables in a salad bowl
  3. Gather herbs in the blender browse, 2 tablespoons of lemon juice, 50 ml of olive oil, a pinch of salt, one of pepper and a cube of ice. Blend until an emulsion of a beautiful bright green color and dress the barley salad
  4. Peel the avocado and cut into small cubes and add to the salad last
