Whole Wheat Focacci with White and Black Grapes

INGREDIENTS
INSTRUCTIONS
  1. Dissolve yeast in 220 ml of warm water to dissolve it completely, then also melt the honey and add 200 g of white flour, deriving a batter. Cover and let stand for 45 minutes.
  2. Mix the remaining flour and whole wheat flour with salt and coconut flour (or almond). Then embed them along with 3 tablespoons of olive oil to the batter, pouring a little water if necessary, obtaining a uniform and smooth mixture . Engrave and place it in a container with a lid (such as a pan) lined with parchment paper, wrap the whole thing with a cloth and let rise for at least 90 minutes.
  3. Shell the grapes keeping separate the two colors, then cut each grape in half lengthwise and remove the seeds.
  4. Divide the yeast dough into 2 parts, flour carefully and roll them out obtaining 2 sheets from 30x40 cm. Place the dough in a lightly oiled baking pan (or covered with a sheet of baking paper) and cover evenly with rows of grapes blacks alternating with empty rows.
  5. Cover with the other sheet and form the rows of white grapes in correspondence to the empty spaces left in the first sheet.
  6. Sprinkle the surface with sugar, cover with a cloth and let rise for at least 30 minutes. Then bake the cake at 200 ° C for about twenty minutes. Let cool before serving.
